All the flavor of homemade cinnamon rolls — none of the early morning effort.

There’s something magical about waking up to the smell of cinnamon and sugar baking in the oven. And with this Overnight Cinnamon Roll Casserole, you can enjoy that magic without rolling out a single piece of dough before sunrise.

This recipe is everything you love about warm, gooey cinnamon rolls — soft layers, sweet icing, and that irresistible spiced aroma — all baked into a rich, custardy casserole. The best part? You prep it the night before, pop it in the fridge, and in the morning, just bake and serve.

Whether you’re hosting holiday brunch, feeding a crowd, or just want a special breakfast for your family, this casserole checks all the boxes: comforting, indulgent, and unbelievably easy.

Overnight Cinnamon Roll Casserole – The Recipe

Ingredients:

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing

  • 4 large eggs

  • 1/2 cup heavy cream (or whole milk)

  • 2 tsp vanilla extract

  • 1–2 tsp ground cinnamon

  • 1/4 cup maple syrup (optional, for extra richness)

  • 1/2 cup chopped pecans or walnuts (optional, for crunch)

  • Cooking spray or butter (for greasing the dish)

Instructions:

  1. Prepare the baking dish:
Grease a 9x13-inch baking dish with butter or cooking spray.

  2. Cut and layer the cinnamon rolls:
Open the cinnamon roll cans and set the icing aside. Cut each roll into quarters. Spread the pieces evenly in the prepared baking dish. Sprinkle with nuts if using.

  3. Mix the custard:
In a medium bowl, whisk together the eggs, cream, vanilla, cinnamon, and maple syrup (if using). Pour this mixture evenly over the cinnamon roll pieces.

  4. Cover and refrigerate overnight:
Cover the dish tightly with foil or plastic wrap and refrigerate overnight (or for at least 6 hours).

  5. Bake the next morning:
Preheat the oven to 350°F (175°C). Remove the casserole from the fridge and let it sit at room temperature while the oven heats. Bake uncovered for 35–40 minutes, or until golden brown and cooked through.

  6. Add the icing:
Warm the reserved icing slightly in the microwave and drizzle over the casserole right after baking. Serve warm.

Serving Suggestions:

  • Pair with fresh fruit or scrambled eggs for a complete breakfast.

  • For a festive touch, top with a sprinkle of powdered sugar or extra cinnamon before serving.

  • Great with a hot cup of coffee or a cold glass of milk!

Whether it’s Christmas morning, a birthday breakfast, or just a lazy Sunday, this Overnight Cinnamon Roll Casserole is a guaranteed crowd-pleaser. Prep it once, and it might just become your new favorite breakfast tradition.
