An Accidental Recipe for Something Unexpectedly Delicious

There’s a certain kind of kitchen chaos that only reveals itself when you don’t plan it. Like when you find butter on the counter—not quite solid, not quite liquid—just sitting there with a glisten of rebellion. That’s how this story starts: with one stick of forgotten butter, a warm kitchen, and a surprise recipe that melted its way into my heart.

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.

  2. Pour that beautifully melted butter into a bowl. Add the mashed bananas, brown sugar, egg, and vanilla. Mix well.

  3. In another bowl, whisk together flour, baking soda, salt, and any add-ins you like (I’m partial to cinnamon and walnuts).

  4. Combine the dry and wet ingredients until just mixed. Don’t overdo it.

  5. Pour the batter into the pan and bake for 50–60 minutes, or until a toothpick comes out clean.

  6. Cool slightly, slice thick, and serve warm with—what else?—more butter.
