Beef Broccoli in Noodles Recipe

🍜 Beef Broccoli in Noodles Recipe

⭐️ Ingredients:

For the Beef & Marinade:

  • 12 oz (340g) beef sirloin or flank steak, thinly sliced against the grain

  • 1 tbsp soy sauce

  • 1 tsp cornstarch

  • 1/2 tsp baking soda (optional, for tenderness)

  • 1 tsp sesame oil

  • 1 tsp rice vinegar or Shaoxing wine (optional)

For the Sauce:

  • 1/4 cup low-sodium soy sauce

  • 2 tbsp oyster sauce

  • 1 tbsp hoisin sauce or honey

  • 1 tbsp brown sugar

  • 1 tbsp cornstarch

  • 2/3 cup water or beef broth

  • 1 tbsp rice vinegar or lime juice

  • 1 tsp toasted sesame oil

Stir-Fry Ingredients:

  • 2–3 cups broccoli florets

  • 8 oz (225g) noodles (lo mein, ramen, udon, or spaghetti)

  • 3 cloves garlic, minced

  • 1 tbsp ginger, grated

  • 2 tbsp vegetable oil or peanut oil

  • Green onions and sesame seeds for garnish

🔪 Instructions:

1. Marinate the Beef:

In a medium bowl, combine sliced beef with soy sauce, cornstarch, sesame oil, and vinegar. Toss well and let sit for 15–30 minutes (up to 1 hour in the fridge for more flavor).

2. Make the Sauce:

In a small bowl, whisk together soy sauce, oyster sauce, hoisin or honey, brown sugar, cornstarch, water, vinegar, and sesame oil until smooth. Set aside.

3. Cook the Noodles:

Cook noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

4. Stir-Fry the Broccoli:

In a large wok or skillet over medium-high heat, add 1 tbsp oil. Add broccoli and 2 tbsp water. Stir-fry for 3–4 minutes until bright green and tender-crisp. Remove and set aside.

5. Sear the Beef:

Add another 1 tbsp oil to the pan. Add marinated beef in a single layer and cook for 1–2 minutes without stirring to get a good sear. Flip and cook for another 1–2 minutes until just cooked through. Remove beef and set aside.

6. Sauté Aromatics:

Add garlic and ginger to the same pan. Sauté for 30 seconds until fragrant.

7. Combine Everything:

Return the beef and broccoli to the pan. Add cooked noodles. Pour the sauce over everything. Toss well and stir-fry for 2–3 minutes until the sauce thickens and everything is coated and heated through.

🌿 Garnish & Serve:

Top with chopped green onions, sesame seeds, or a drizzle of Sriracha for heat. Serve hot and enjoy your homemade takeout-style meal!

🔁 Variations:

  • Spicy Kick: Add red pepper flakes or chili garlic sauce to the stir-fry.

  • Vegetarian: Replace beef with tofu or mushrooms.

  • Low-carb: Use zucchini noodles or shirataki noodles.

  • Extra veggies: Add bell peppers, snow peas, or carrots for more crunch and color.

🧊 Storage:

  • Refrigerate leftovers in an airtight container for up to 3 days.

  • Reheat in a skillet with a splash of water or broth for best texture.
